(Hale‘iwa, Hawai‘i) — Renowned local Chef Luis Silva is back with Lui’s Mex, a catering and private chef business based on O‘ahu’s world-famous North Shore.

Everybody knows Chef Luis for his fresh Mexican food, freshly made sauces and salsas, signature fish tacos and more North Baja-style cuisine — and for his specialization in seafood. Lui’s Mex is Mexican cuisine, reimagined for discerning and modern taste buds with flavors any abuelita (grandmother) would love.

Cooking great Mexican food, seafood and cuisine of other cultures in Hawai‘i since 2003, Silva’s private chef clients have included award-winning Formula One drivers, world-class champion surfers including Kelly Slater, as well as global lifestyle brand founder Bob Hurley.

“Luis Silva is an excellent chef and has been catering events for us in Hawai‘i for many years,” said Hurley. “Luis’ food and service are excellent and if you get the chance, ask him about his grandma’s red roasted salsa. We buy it by the gallon.”

Luis’ culinary talents, honed over three decades, are sought after by longtime kama‘aina families, such as for a recent high-caliber Hawaii Polo Club match in Mokulēʻia.

“I did some oysters with tobiko and ponzu and the guests told me it was delicious. I also prepared poke, ceviche, shrimp tacos and fish tacos,” for the event, Silva said.

Born in San Diego, his family was active in community service that involved food. “My parents would do the Catholic church kitchen once a month,” he said. “I was raised going down to Baja, Mexico, where we would eat all that nice food and experience the culture and amazing cuisine that they have down there. That’s where I got

my inspiration and direction about ingredients and dedication to the craft, not cutting corners on any kind of food I do.”

Silva is best-known for his “North Baja Style” specialties, Mexican food and seafood and as an alumnus of the Culinary Art School in Tijuana he is familiar with cuisines from around the world. “I cook pretty much anything: Hawaiian, American-style, Greek, a little Italian, I can do sushi, and I’ve been hired to do Southern American-style barbecue ribs, corn, slaw and other comfort food,” he said.

Prior to establishing Lui’s Mex, Silva forged a new path with another of his brands, Silva Events Hawaii Corp., creating beautiful, memorable and delicious events. Luis formed the event company to provide event planning, catering and private chef services around Oahu.

As a private chef, caterer and event planner and caterer he also brings more than delicious food to any occasion. “I have a team that provides fresh juice cocktails, tropical drinks with a different twist, fresh cucumber water, strawberry water, clean, low-carb mai tais that taste fresh, and more,” he said. About Luis Silva

In his early career, Luis’ talents lead him to the World’s Fair in Lisbon, Portugal where he served as a culinary assistant. That led to his role as lead kitchen manager at the Swiss National Exposition in Biel, Switzerland.

He served as official event caterer for the Vans Triple Crown of Surfing from 2004 through 2008, a year in which his culinary work was featured in an episode of the Hawai‘i episode of the late Anthony Bourdain’s “No Reservations” show on the Travel Channel. He also has appeared on Sam Choy’s cooking show and served as chef at the Chefs Under the Stars event at Turtle Bay Resort from 2010 through 2013.

He established Luibueno’s Catering Co. in 2003 in Hale’iwa. Formerly the chef-owner of Luibueno’s Authentic Mexican Cuisine, Silva has no connection to the former Kapolei restaurant that operated under a similar name.
